Adventures in Food… Lemon Fairy Cakes

The other weekend I decided to bake. I don’t bake as I am afraid I would end up binging on all the cakes. But I decided to give it a go and although I did eat three in one sitting one night I didn’t do as bad as i thought and even ended up throwing a few away once they went stale. The other part was that I really enjoy the act of baking something and making it from scratch. That held me back and wanted to enjoy them for as long as I could.

So the sponge was a simple recipe to make 12 big cakes:

  • 6oz Flour
  • 6oz Butter
  • 6oz Sugar
  • Tsp Baking Powder
  • 3 Eggs

Put it all in a bowl and whizz together.

I used some reusable cases that my friend Ingrid gave me and thought they were fantastic.20130624-204219.jpg

I used an electric mixer to whizz it together.20130624-204225.jpg

Then into the oven for 20 minutes. Next time I would make less of the mixture to make smaller cakes and cooke them for slightly less.

They came out looking slight brown and golden, but over flowed a bit, so definitely less mixture.20130624-204241.jpg

I decided to make lemon icing and did that by mixing lemon curd with icing sugar and some water. This was great, but it didn’t really set once on the cakes. 20130624-204248.jpg

And most importantly they were yum! But at 7 ProPoints each, not really worth it. I would make these again, but smaller versions 🙂
